Carrot Cake Overnight Oats Recipe

My official bid to replace Pumpkin Spice with Carrot Cake as the seasoning of the season.



I have never been all that enthralled with pumpkin spice. Carrot cake on the other hand...well I could eat that for every meal and still want more. For me, I feel I can justify eating a sh!t ton of carrot cake because it has carrots in it. Nope, I'm not listening....*sticks fingers in ears* "lalalalalalalal"... I don't care if that is not nutritionally sound. I get it. I'm choosing not to care.


Anyway... I figured it's the perfect time of year to share this recipe and nothing beats such a quick, easy and nutritious meal prep meal.

***Just a heads-up: measurements for the spices are estimates because I season by taste. You'll figure out what works best for you right after your first try making it

Ingredients

  • 1 - 1 3/4 of rolled oats

  • 1/2 tbsp. of chia seeds

  • 3-4 Pitted Medjool Dates

  • 1/2 cup Shredded Carrots

  • 2 cups (or enough to submerge the oats) Coconut Milk

  • 1/2 tbsp. of cinnamon

  • 1/4 tbsp. of allspice

  • 1/4 tbsp. of nutmeg

  • 1/2 tbsp. of hemp seeds*

  • 1 tbsp. of ground flax seeds *

  • 1/2 scoop full Om mushroom powder*

  • Coconut Shreds as topping*

Instructions

  1. Grab an 16 oz. (at least) glass jar or refrigerator friendly container and load in your oats, dates, carrots, chia seeds, hemp seeds, flax seeds, spices, and mushroom powder. I find that if you do it in this order it will be more flavorful because dates usually end up towards the bottom and get to soak, likewise with the carrots, and they soften up as well, and spices will run from top down and become better incorporated. If you are a thorough mixer, you won't have to worry about it.

  2. Add your coconut milk (enough until oats are fully submerged).

  3. Shake/stir/mix

  4. Top off with coconut shavings (maybe some honey too, if you're into that kinda thing)

  5. Enjoy next morning

Will last in refrigerator up to 4 days


Tip: I prefer warm oatmeal, so I tend to take it out of the fridge 15 mins before I plan on eating and let it come to room temperature. Then I'll pop it in the microwave for a minimum of 1 1/2 mins. If you go from fridge directly to microwave, you run the risk of temperature shocking the jar and adding an extra crunch of broke glass.
